Paso Prime marks the return of fine, artisanal beef raised in California in the old Argentine style. Our story began along the Central California Coast, harnessing the rich agricultural heritage of historic ranches originally deeded as Spanish land grants to American families who still work them today in Paso Robles, Santa Maria, and Santa Ynez. Using old world techniques passed down and perfected through generations, our ranchers work the land, faithful to a naturally sustainable process that produces exquisite beef characterized by deep burgundy red colors, milky white marbling, abundant nutrients and elegant flavors. The signature flavors and supple tenderness of Paso Prime are achieved naturally, without the use of added hormones, antibiotics, or grains creating delicious beef without unintended consequences.
