BIO

The evolution of epicurean expression that is Master Chef Massimo Navarretta has taken many beautiful forms along his more than 30 year journey. He has given us many romantic Italian expressions along the way like Enoteca, Scampi, and now Onotria. Always true to his roots growing up on a farm in the vibrant agricultural Italian town of Caserta, in every dish, Massimo shares glimpses of the first flavors he fell in love with as a boy. Stemming from his travels in culinary school, the budding master chef came to understand clearly the essence of each regional cuisine he experienced.

Forging relationships with what were, at that time unknown artisanal wine producers (who would later become known as the great producers of their respective regions), Massimo began to echo the flavors inherent in the soil masterfully pairing them with local ingredients and intensifying the flavors of each hand crafted dish. These forward thinking and visionary wine selections have matured over time and blossomed into one of the finest and most sought after cellars in Orange County surrounded by a menu offering dishes whose flavors lull you into the same mild sense of euphoria as your first glass of fine wine that accompanies your meal.
